Mini Apricot Tarts

This is Kaya’s recipe!  We’ve been in the fruit picking craze….wish we had access to more, but we really make good with what we do get. We picked tons of pie cherries. And apricots too! We’ve had cherry pie, two cherry cobblers, apricot muffins and now apricot tarts! Individual ones! Wow – Kaya!!

Here is her crust recipe:

Unshrinkable Tart Crust

1 1/2 cups flour

1/2 cup powdered sugar

1/4 tsp salt

1 Stick and 1TBS cold butter

1 egg

Pulse flour, sugar and salt in a food processor. Add piecs of cold butter – pulse until it is grainy like peas. Stir yolk and add in additions.  When the dough forms clumps, take it out. Knead it a bit and chill for two hours.  When chilled roll out, put into pan and freeze for 30 minutes.

Use with your fruit of choice and enjoy the scrumptiousness!!
